There will be 5 heats with progressive start times. Stations include:
- Menu & Costing
- Product Check-in / Safety & Sanitation
- Station Pre-Set
- Knife Skills (displaying 12 cuts) & Poultry Fabrication
- Production Pre-Set
- Production of a 3-course gourmet meal
The general public is welcome to watch the competition (no charge) starting at 8:30 a.m. Please note, there is no speaking to the teams allowed while they are competing (they may lose points).
The public is also welcome to participate in a 'back of the house' tour of Red Lion Hotel's facilities to learn about their kitchen and sustainability practices.
